Scones Scones SCONES!! Oh my how we miss(ed) scones in our family... we often went out for them on the weekends or a quick stop at Twiggs for a quick breakfast on the way to school. You know those mornings right? The ones where you don't quite manage to get them, or yourself, up and ready in time to assemble even dry cereal in a bag kinda mornings! 

So I was determined to make them myself! After a few trial and errors of heavy, grainy, just plain odd and not quite right GF scones, I tried the King Arthur recipe. And what do you know ~ a winner! Really crunchy on the outside and moist and tender inside. I have used other flour blends (Pure Pantry is a good pre-mixed one) and have made them with my own flour blend as well.  All with great results.  So far, the the most enjoyable scone we have had since going gluten free. And quite honestly, better than many 'regular' scones out there! Here is the link to the recipe with a few tweaks (I never leave a recipe alone!)...
~Liberally sprinkle sugar on the tops before baking. The sweet crunchy tops are divine!!!
~When using dried apricots (be sure to use plump Turkish style), I add a dash of cardamom.  
~Imagination is the fun, a good GF flour blend is the key!
